I'm planning graduation party for our daughter for family and friends (about 70 people) and wonder whether you have any great-tasting easy recipe ideas. Most everything will have to be prepared ahead of time, since the graduation is at 10am and the party will follow. I have already prepared a barbecued chicken and barbecued beef and have frozen both. Any side dish and dessert suggestions? --demudd

Dear demudd:

My son just graduated last year and went away to college. I can't stand it, but it is a time for celebration. A barbecue is a great idea for a graduation party because the main course is prepared on the grill. Start the party off with simple recipes that appeal to the graduates such as dips with chips. A layered Tex-Mex dip is an all-time favorite, or try a salsa. Throw chicken, ribs, sausage -- a variety of meats -- on the grill, which takes care of your main course. The meats can be marinated days ahead with bottled marinades or your choice. To accompany the main course, try a salad, but it doesn't have to be the traditional potato salad. There are bean salads, pasta salads and couscous.

Most salads can be prepared the day before too. Even if you don't barbecue, you can buy a main course and just do the sides. Or prepare a one-dish meal for your main course and serve simple sides. For dessert, try a light alternative by filling a carved watermelon with fresh fruit, or buy a fruit tray with a flavored yogurt dip. Buy sturdy paper goods and serve buffet-style. Remember, you want a simple day so, most importantly, you can have a good time too.
